Can we just take a minute to talk about how intense the election coverage was! Is it bad to admit that I’m slightly glad it is over? All of the political talk has really taken a toll these last couple of months! It’s been so heavy!
Something you may not know is that I love cooking! Like, I really love it. I love planning out my meals, I love measuring things to make sure I’m on track, and I love seeing results for sticking to a program. I am eight months out from my wedding and I’m really trying my hardest to be in the best shape possible. I feel like the best approach for me is to start super early. I don’t want to fad or crash diet so I’m really trying to go about it the healthy way. Guys, trying to lose weight healthily is no joke. It’s just hard. But I’m trying. There will be bumps in the road but I’m trying. That leads me into a new series on the blog. I love reading what other people ate for ideas so I thought I’d share what I’m eating as well!
What I Ate Wednesday, Volume 1
I honestly am not a breakfast person. I’m not a huge fan of breakfast food and I hate the heavy, full feeling early in the morning. I do love coffee and the Chameleon Cold Brew Carmel Coffee is one of my favorites. I add a very small amount of flavored creamer and half a serving of Silk Cashew Milk. This is perfection. It’s my current go to coffee drink and it is just delicious. If you aren’t a hot coffee drinker you should give this a whirl. So, so good.
I happen to live super close to work and am lucky enough to be able to drive home for lunch. It’s incredibly helpful when trying to stay on track for weight loss, especially since I’m really picky about what kind of leftovers I eat. On this particular day I had a turkey burger with a Garlic and Herb Laughing Cow Wedge, reduced sugar ketchup, mustard, and lots of lettuce because, well, volume. I also grilled some okra seasoned with garlic powder and pepper and a half a serving of red cherries. Fun fact; I’m not a big fan of salt so aside from the condiments I use I’m pretty good at keeping my sodium levels low. This was such an easy and satisfying lunch. Oh, and it was quick.
Some of my favorite meals are made in the crock pot. I think the main reason for this is that I have a hard time eating a lot of meat reheated but I think crockpot meat, especially chicken, reheats really well. This recipe is so easy. Just a few simple ingredients and you have a relatively healthy, hearty meal. You can also do a lot with this recipe. You can eat it by itself, serve over rice, or even make tacos out of it. I usually try to make a sort of taco salad and top it with lettuce, jalapeños, salsa, cheese, greek yogurt, and a few tortilla chips. I also had a glass of red wine because ya’ll know I’m a sucker for wine. I’ll link the recipe below.
If you have any healthy recipes that are your go to’s I would really love to hear! I’m always looking for suggestions and new recipes to switch things up a little.
I’m not much of an early morning eater and I prefer bigger meals opposed to multiple snacks and smaller meals. I’m sure there are plenty of people who disagree with this method but I’m a firm believer in doing what works best for you. This is what has worked for me and what I plan to continue with moving forward. I am also not a vegetarian or vegan. Again, I do what I feel is best for me and you are welcome to do the same. I won’t knock your ways and you shouldn’t knock mine. To each their own. I am not a registered dietician or health professional.
